Recipe of the Week:
Thai Red Cauliflower Soup

- 1 T vegetable oil
- ¼ C Thai red curry paste
- 1 brown onion, chopped
- 2 whole caulis
- 400g can coconut cream
- 1 C vegetable stock
- 1 T fish sauce
- 1 T brown sugar
- 1/3 C fried shallots
- ¼ C coriander sprigs
- ½ long red chilli – chopped finely
- 2 t grated lime rind

Heat oil in large saucepan over med heat. Cook thai red curry paste for 1” or until fragrant. Add chopped onion and cook stirring for 2” or until softened slightly. Add cauliflower (flores or chopped) and toss to coat. Add coconut cream, vegetable stock & bring to boil. Gently boil covered for 18” or until cauli is tender. Allow to cool – blend soup until smooth. Stir through fish sauce and brown sugar. Taste and season with S & P. Divide soup between bowls. Top with fried shallots, fresh coriander, chilli and lemon rind. Serves approx. 4
