| | - 1 kg pumpkin, peeled and diced
- 2 T red curry paste
- 300ml coconut cream
- 1/4 c coriander chopped

Saute pumpkin & red curry paste until it starts to catch on the saucepan. Add coconut cream to deglaze pan, top with enough water to level with pumpkin and bring to boil. Reduce heat, simmering until pumpkin becomes soft and mushy. Puree, season with S & P and fold in chopped coriander.
